Homemade Pierogis

I’ve been craving homemade pierogis so I made them yesterday on my day off. They were time consuming, but worth it because they were very delicious! These ones are stuffed with broccoli cheddar filling. I served them over a bed of sautéed onions, peppers, and kielbasa.

Korean Ramen

On days I miss Korea I make these noodles.

In South Korea they make all kinds of soups with them. Ramen is usually seen as poor mans food or college kids food here in America. They have made it all sorts of ways in Korea. Some have dumplings, cheese, eggs, pork. You can really spice it up to make it a filling meal. Plus it’s inexpensive. These noodles are more expensive here, but to fill cravings they hit the spot.

I get this type of Ramen at Kroger’s, but I’m sure there are different places to buy them. They are a great comfort food!

Red Pepper Sauce

Tonight I had to use up some peppers that were about to go bad. I made up a version of red pepper sauce. It was delicious!

A fast way to make potatoes is to put olive oil rosemary and thyme on them and lay them out on the griddle.

This was a great dinner !

Garden Leftovers

Today I made homemade lasagna with our leftover tomato sauce we canned in 2018.

The sauce started out runny. To thicken it I used some tomato paste, a can of fire roasted tomatoes, and some cornstarch.

We have been in quarantine due to the corona virus, so we break up the meat for separate meals. Half the ground beef went to burgers and the other half I used in the lasagna.

The eggs help bind all the cheeses together! The cottage cheese is optional. You can’t really taste it I think it helps the texture though.
